I have to iterate that I wasn't necessarily raving about the meatloaf last night. It doesn't excite me much - and this one is especially not exciting, but good for kids. My point was all the "meatloaf" talk, and then Will asks for more of that chicken. For Will, all meat = chicken.
But, here is the recipe. I make it because I HEART crock pot recipes. I added some worchestershire sauce and we think the "sweet" glaze on top should be traded for more of a ketchup/A1 type mix or something. Not digging the sweetness.
Tried and True Crockpot Meatloaf
1 1/2 lbs. ground beef
2 eggs
3/4 c. milk (I use soymilk)
3/4 c. bread crumbs
1 onion, chopped
1 t. salt
1/4 t. pepper
1/4 c. catsup
2T. brown sugar, packed
1 t. dry mustard
1/4 t. nutmeg
Combine beef, eggs, milk, bread crumbs, onion, salt, and pepper; mix well. Form into a loaf; place in a slow cooker. Cover adn cook on low setting for 5 to 6 hours. Whisk remaining ingredients together; pour over meatloaf. Cover and cook on high setting an additional 15 minutes. That's it!

And I know the last post was about Will's cuteness, but when you say something like "crockpot meatloaf" and "my kids ate it" in the same sentence, people need your recipe for "chicken" meatloaf! :)
I love meatloaf, and Kelly says I make the best. (It's the original Betty Crocker recipe from 100 years ago, with a few tweaks...sssshhhh!!) I do straight ketchup on the top of mine, but I put it on before the meatloaf goes in the oven. It seems like the "topping" on this meatloaf would be somewhat like raw ketchup (of which I am not a fan). Maybe a shot of bbq sauce or something would give it some zing? It does sound sweet, but if the kids ate it, it must have been good!

Thanks, Karie. My favorite meatloaf recipe is from my Diner cookbook... It's kinda labor intensive, but it's full of vegetables, so I love it. I never put a glaze on mine cause I love meatloaf sandwiches, but don't like that sticky stuff on my sandwich. Wow, whoever thought you'd have so much information about meat loaf? Especially since it was chicken we were talking about!! :-)
